Things should have slowed down now that the holidays are over, but we're keeping on truckin' in the Ratcliff household. No R & R for us!
My sister recently had a baby boy (the first boy on my side of the family in 58 years!) and I was able to bring her family their first post-baby home cooked meal. The girls at our church do a wonderful "meal chain" for new moms and the families typically get home cooked meals for weeks. But I got a jump on those other girls!
I decided to bring my sister's family my go-to meal for new moms - Dad's "no peek" beef tips (known by my family as Beef Tips and Rice). Typically, when you've had a meal chain coming your way for a couple of weeks, you're getting casserole after casserole and it usually always involves chicken. Now, don't get me wrong - I love a good casserole - but it's nice to switch things up a bit. And these beef tips definitely do!
This recipe is super easy. You just throw it in the crock pot and go about your business! Here's how you make it:
Dad's "No-peek" Beef Tips
First, gather your ingredients. (Note, the actual beef tips are left out of this photo as they'd already entered the crock pot at this point).
2 lbs of beef stew meat (cut in bite size pieces)
1 can of cream of mushroom
1/2 cup of red wine (or red cooking wine)
1 envelope of onion soup mix
1-4 oz jar/can of mushrooms (optional)
Rice or noodles (your choice)
Combine all ingredients into crock pot. That's right; just dump them in there.
Give it a good stir.
Then put the lid on and cook on low for 8 to 12 hours, or high for 5 to 6 hours.
Voila! It is ready to go - yummy as can be! Serve over rice or noodles (my hubby prefers rice). When taking to another family, I typically take a few of those Uncle Ben's microwaveable rice pouches which are easy to heat in the microwave just before eating. I also bring along a nice loaf of French bread from the grocery bakery.
And they love it.
